At Eat Clean Meal Prep, we are all about avoiding boring dinners! In fact, we make it a point to cook up flavorful, spice-filled dishes any chance we get (did our epic new spices give us away?), and these recipes are no exception. One of our favorite classics is, of course, Zesty Lemon Pepper; infused with cool garlic and zesty hints of lemon, it makes for a great pairing with baked chicken and fish dishes – which are super easy to throw in the oven during a crazy work week! Here are three delicious meals to cook with our very own Zesty Lemon Pepper Seasoning.
1. Baked Lemon Pepper Chicken
This recipe starts on the stovetop then finishes in the oven for super extra-juicy flavor. If you don’t want to turn on your oven, you can do everything over the stovetop too. Just cover the skillet with a lid after you add the sauce ingredients, reduce heat to medium, and cook for about 12 minutes.
½ cup all-purpose flour
1 tbsp. Zesty Lemon Pepper Seasoning
1 tsp. kosher salt
2 lemons, divided
1 lb. boneless skinless chicken breasts halved
2 tbsp. extra-virgin olive oil
½ cup. low-sodium chicken broth
2 tbsp. butter
2 cloves garlic, minced
Freshly chopped parsley to taste
Preheat oven to 400°. In a medium bowl, whisk together flour, Zesty Lemon Pepper Seasoning, salt, and zest of 1 lemon. Toss chicken breasts in the flour mixture until fully coated. Slice remaining lemon into thin rounds.
In a large ovenproof skillet over medium-high heat, heat oil. Add chicken in a single layer and cook until golden on bottom, about 5 minutes, then flip chicken breasts. To skillet, add broth, butter, garlic, and lemon slices and bake until chicken is cooked through and the sauce has reduced slightly, 15 minutes. Spoon sauce on top of chicken and garnish with parsley.

Imagine the bright, sour, zesty flavor of sucking on a lemon slice. Now, tone that back a little and add the bright, sharp taste of black pepper, then, a hint of cool garlic flavor.
2. Lemon-Pepper Tilapia
A nice white fish like tilapia makes for an easy, healthy weeknight meal. Because tilapia is so bland, spicing it up with plenty of seasonings is always a good idea! This dish is light and refreshing while still being super flavorful – and is so easy you’ll be ready to eat in 20-30 minutes. We like to serve it with a roasted vegetable mixture or white Jasmine rice.
6 tilapia fillets (6 oz each)
2 tbsp butter
2 tsp grated lemon peel
1 tbsp lemon juice
1 tsp garlic salt
1 tsp paprika
½ tsp freshly ground pepper
1/4 cup minced fresh parsley
Preheat oven to 425°. Place tilapia in a 15x10x1-in. baking pan. In a microwave or over the stove, melt butter; stir in lemon peel and juice. Drizzle the mixture over fish. Sprinkle with garlic salt, paprika and a touch of Zesty Lemon Pepper Seasoning.
Bake, uncovered, 10-12 minutes or until fish just begins to flake easily with a fork. Sprinkle with parsley. Serve alongside vegetables or rice.
3. Easy Lemon Pepper Roasted Vegetables
There’s nothing better than a big bowl of ultra-flavorful veggies to go along with any dish. This is a simple recipe loaded with carrots, onions, and garlic; feel free to replace or add in more vegetables of your choice!
1 tsp Zesty Lemon Pepper Seasoning
2 carrots, peeled and cut into bite-sized pieces
½ red onion, sliced
1 parsnip, peeled and cut into bite-sized pieces
1 pound fingerling potatoes
4 whole garlic cloves, peeled
¼ cup grapeseed oil
Preheat oven to 350 degrees and line a rimmed baking sheet with parchment paper. Toss the vegetables and garlic cloves together in a large bowl with the seasoning and oil.
Transfer the vegetables to the lined baking sheet and cover securely with aluminum foil. Roast for 45 minutes. Carefully remove the foil and turn the vegetables to ensure even browning.
Return to the oven, uncovered, and turn the heat up to 450 degrees. Let roast for 15 minutes or until browned.
